Spicy Zucchini Nachos

| HARVEST CREATIONS® Zucchini Coins spiced with TABASCO® brand Original Red Sauce flavor | 24 ounces | 
| Plum Tomatoes, diced | 10 each | 
| Red Onion, diced | 1½ cups | 
| Fresh Cilantro, chopped | 1 cup | 
| Small Jalapeño Peppers, veins and seeds removed, diced | 3 each | 
| Kosher Salt | ¾ teaspoon | 
| Black Pepper | ½ teaspoon | 
| Fresh Lime Juice | ¼ cup | 
| Shredded Pepper Jack Cheese | 1½ cups | 
| Cooked Black Beans, rinsed | ½ cup | 
Method
- In a bowl, prepare pico de gallo: Combine tomatoes, onion, cilantro and jalapeño. Season to taste with salt, pepper and lime juice.
 - Deep-fry zucchini coins at 350ºF for about 2 minutes or until golden brown.
 - Top fried zucchini coins with pepper jack cheese and beans. Serve with pico de gallo.
